15 BEAN SOUP - INSTANT POT

Ingredients:
   1   20 oz pkg Hurst's 15 bean mix
   2T  olive oil
   1   medium onion
   2   garlic cloves
   2   carrots
   2   celery ribs
   1   14.5oz can diced tomatoes
   2   bay leaves
   .5T dried thyme
   8c  water or broth*
   1#  diced ham
   Salt and pepper

Prep:
   Bowl 1:
       onions: dice

   Bowl 2:
       garlic: mince
       carrots: slice
       celery: slice

   Bowl 3:
       ham: 1/2in dice
       tomatoes
       bay leaves
       thyme
       beans

Instructions:
 - Set Instant Pot to saute, 15 mins.
 - Add Bowl 1. Saute 5 minutes
     (onions soft, starting to brown).
 - Add Bowl 2. Saute 5 minutes
     (veggies fragrant).
 - Turn off Instant Pot.
   Add Bowl 3, water/broth.
 - Set Instant Pot to manual,
     high pressure, 40 minutes.
 - Allow pressure to release (~20mins).
 - Add salt and pepper to taste.
