Labskaus

Labskaus is a traditional german workers meal mostly found at the
coastal regions, its a hefty meal that will keep one going doing hard
physical labour.


Difficulty: Easy
Downsided: You can get cought red-handed
Optimal weather: Cold

You need for about three persons (or two with some leftovers for the
next day):

* About 1 kg potatoes
* 3 - 4 beetroot (ideally fresh, but pre-cooked is also ok)
* Onions (about 1 medium sized)
* A small can of corned beef
* 3 Eggs
* Pickled herings
* Pickled cocumbers


If you start with fresh beetroot put them in a pot and let them boil
until you can poke them with a knife tip without much resistance (this
may take 30 min to a hour).

Meanwhile peel the potatoes, cut the big ones in half and boil them
until they are well cooked.

Take the beetroot out of the pot and peel them - if you don't like to
look like you just commited mass murder be careful with your clothing
and ensure that everyone that mey stumble into the kitchen knows what
you are doing or be prepared for an awkward moment. Seriously. Oh, and
be prepared that the red coloring might stick to your hands for a while.

Cut most of the beetroot into small pieces, a small amount should be
sliced into disks for serving.

Put the amount of beetroot that you have cut in small pieces into the
pot with the cooked potatoes and mash everything together.

Cut the onions and brown them in a pan, add the corned beef and let it
simmer until the fat in the beef is well melted.

Give the content of the pan into the pot with the mashed beetroot and
potatoes, steer everything through. Seasoning is traditionally (at
least in my family) done with salt and pepper and a bit water from the
pickled cocumbers.

Now fry the eggs.

Put a gut amount of the mashed potatoes/beetroot on a plate, put one
or two sliced pickled herings and cocumbers besides and the fried egg
on top.
