Powerful substance though. High fructose corn syrup has the
  properties of a sweetener AND ALSO an oil, which is why it's so
  useful in foods. [especially 'fat-free" heh] Corn starch has
  fascinating properties too. Look up some videos (I bet you've
  seen 'em) on its elastic properties... how it behaves like a
  liquid when you enter a pool of corn starch water SLOWLY but
  like a solid if you enter quickly.
