Sugar Cookies: Drop, soft and chewy


Ingredients:
1 cup   Butter, room temp
1.33 c. sugar
1 large egg
2 tsp   vanilla
12.5 oz all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
* Decorating sugar and sprinkles as desired for rolling

Directions:
1.)  Line baking sheets with parchment and preheat oven to
    350 degrees F
2.)  Cream butter and sugar together with mixer scraping down
    sides of bowl as needed--about 3-4 minutes
3.)  Add egg and vanilla; mix for 1-2 minutes until batter ligtens
4.)  In separate bowl, whisk dry ingredients together
5.)  Add dry to wet and mix to combine
6.)  Scoop dough into rounded balls (approx 2 Tbsp) roll in sugar
    or sprinkles as desired; place on baking sheet about 2-inches
    apart (approx. 12 cookies per sheet)
7.)  Bake for 11-13 minutes until slightly cracked but not much
    color around edges or bottom
8.)  Let cookies cool on baking sheet before transferring to
    cooling rack
