Julie's Chicken Enchiladas

My wife's friend changed an enchilada recipe to use Italian seasoning,
olives etc. for a very very different flavor. It sounds a little
strange but it's quite delicious comfort food...

Ingredients

* 8 flour tortillas
* 2 tbsp minced onion
* 1 tsp minced garlic
* 2 tsp italian seasoning
* 1/2 tsp black pepper
* 4 tbsp butter
* 1/2 cup plain flour
* 2 cups sour cream
* 2 10.5oz cans chicken broth
* 2 cups chicken, cooked and chopped
* 3 cups shredded cheddar
* sliced black olives & diced tomatoes to top

Method

Wrap tortillas in foil. Heat in 350F oven for 10 minutes and set
aside.

Stir flour into sour cream and set aside.

In skillet, melt butter, add onion & garlic, cook until onion is
tender. Add the sour cream mixture, stir in chicken broth, italian
seasoning and pepper. Cook on a low heat and stir until thick and
starts to bubble.

Remove the mixture from the heat and stir in 1/2 of the cheese. Set
aside half of the sauce, and stir chicken into the remainder.

Place approx 1/2 cup of filling on each tortilla and wrap. Place seam
side down in a lightly greased baking dish. Top with the rest of the
sauce that was set aside earlier.

Bake covered with foil at 350F for 25 minutes.

Remove from oven, sprinkle with remaining cheese, sliced olives, diced
tomatoes. Bake uncovered for a further 10 min, then stand for 10 min
before serving.
