3 - 270 g wheat flour | |
4 - 3 tsp baking powder | |
5 - 50 g sugar | |
6 - 0.75 tsp salt | |
7 - 480 ml milk | |
8 - 120 ml oil (vegetable or canola) | |
9 - 2 large eggs separated (cold from fridge) | |
10 - 2 tsp vanilla extract | |

15 1. Preheat your waffle iron | |

17 2. In a large bowl whisk together the flour, baking powder, sugar, | |
18 and salt. | |

20 3. In a medium bowl, whisk together the milk, oil, egg yolks, and | |
21 vanilla together. | |

23 4. In a separate mixing bowl, beat the egg whites on high speed | |
24 until stiff peaks form. | |

26 5. Stir the milk mixture into the flour mixture until almost combined, | |
27 then fold in the egg whites until no streaks remain. | |

29 6. Scoop about 1/3 cup of batter for each waffle into the hot iron. | |

31 Use a clean mixing bowl. Make sure your equipment is squeaky clean | |
32 before whipping the egg whites to lofty clouds. Any lingering oils | |
33 from previous baking adventures will prevent them from setting into | |
34 stiff peaks. If unsure, run a cotton ball dipped in lemon juice on | |
35 your beaters and bowl to clean them. | |
