Introducing Sarah Cahill: Newly appointed Secretary of the FAO/WHO Codex Alimentarius Commission [1]

This article is being published by both FAO and WHO and there may be some readers who do not know what Codex is. Could we start with a potted explanation of Codex Alimentarius?





The Codex Alimentarius, or “food code”, is the collection of standards, guidelines and codes of practice that have been elaborated by CAC since its first meeting in 1963. Their purpose is to protect consumer health and facilitate fair practices in the food trade. They are developed by CAC’s 189 Members (188 Member Countries and one Member Organization (the European Union)), with inputs from 240 Observer Organizations. CAC not only sets standards but is also a valuable multilateral forum that convenes food regulators as well as a range of stakeholders from the food value chain to discuss food safety and quality issues and challenges.
