Breads made without yeast include quick breads like banana bread, zucchini bread, and cornbread, as well as soda bread, salt rising bread, and unleavened breads like flatbreads. These breads typically rely on baking powder or baking soda as leavening agents. Fascinating that yeast can be totally dry or frozen, and still grow and produce CO2 that we like for fluffy bread.
My quotidian bread is white buttermilk bread from Costco. I have some every day. Bagels typically use yeast. Yeast is essential for the leavening process, creating the airy and chewy texture that is characteristic of bagels. I also like English Muffins when they’re a good price.
We loved the rye breads we got in the midwest, and still haven’t found their equal, though Jewish rye comes close. Google says bread remains one of the most widely consumed foods in the world, with at least more than 100 different types of bread available from around the globe. Another take is: “Germany boasts over 3,000 types of bread.”
Gluten intolerance is widespread. I’ve tried samples of gluten-free bread, in case it would be needed for guests, but most were disappointing.
Two bakeries around here are so beloved that there are long lines every day and they run out early. Mrs. sp got some dark rye at one this morning, but she hasn’t tested it yet. She said the line was half a block long, She had reserved the loaf by phone two days prior.
