As I sat with Mr. Brillig tonight eating dinner before coming up to write this diary, we were discussing today’s horrific news from SCOTUS that essentially allows us to traffic human beings to whereverthehell across the globe. I wondered aloud about the cognitive dissonance of talking about summer plans, laughing over funny memes, and generally enjoying life while at the same time our country is descending into fascist chaos at the hands of a corrupt MAGA Republican party and a narcissistic mentally diminished dictator.

“That’s what people tend to do”, Mr. Brillig said. “But we keep finding ways to resist, too”.

K1’s birthday was last week, and the tradition in our family is you get the meal of your choice (home cooked or eaten out) to celebrate. We planned to get together on Sunday, and on Saturday morning she said “I know it’s late, but could we have dumplings, homemade? I understand if it’s not enough time.” We quickly replied it was a perfect idea!! “Oh, and remember [partner] is gluten-free and doesn’t eat pork”.

This is the cookbook we used. If you want the recipe we used, I can put it in the diary comments. We probably should try at least one other recipe from the book, LOL.

We used to make dumplings all the time, before I was diagnosed with diabetes. We’d set aside an afternoon, make dough for wrappers and a large batch of filling from a cookbook Mr. Brillig’s had for decades and we’ve only ever used ONE recipe… the dumpling one. Assembly style we’d prepare hundreds of them, cook and eat as many as we could, and freeze the rest. It made sense she assumed it was a huge production, because we’d always made it one. But a simple batch was easy!!

Mr. Brillig and I immediately decided to make a full batch of traditional pork dumplings. We also would make a batch of filling with turkey substituted for pork. That was an easy substitution, and I decided I’d use part of this filling to make patties, thus making them keto-friendly for me!

Now, about that gluten free part… there are many, many gluten-free products on the grocery shelves, but a gluten-free wonton wrapper is NOT among them. He was prepared to eat the turkey patties I was having, but we really wanted to TRY to make a true potsticker, and I am glad to say the internet did NOT let me down. For the gluten-free among you, here’s what turned out to be a FANTASTIC wheat-free dumpling wrapper recipe. The ingredients were all available in our suburban white-people grocery store and while we were prepared to have it fail, it did not.

See those potstickers in the photo? Those ARE the gluten-free ones. When K1’s partner tasted one, he made that face reserved for sublime, decadent, unexpectedly amazing foods. Then said he’d never HAD a good potsticker and ours were better than any he’d ever had. What sealed the deal on this recipe was K2 eating the leftovers later and *not knowing they were the gluten free ones*.

So Sunday evening Casa Brillig devoured an insane number of dumplings and dumpling filling patties. We laughed, gave K1 her presents, and had a thoroughly enjoyable evening. While bombs dropped, innocent people died, and authoritarian regimes glorified war as the way to peace. It really is all we can do, besides resist. Isn’t it? Dumplings are one of the many things we fight for. Tonight’s diary title comes from a social media post I made Sunday afternoon: “While my #%>€ing government goes to war, I'm sticking with today's original plan... dumplings for my eldest's birthday celebration dinner.”
