Street Prophets Sunday Coffee Hour: What is Cooking? [1]

Welcome to Street Prophets Sunday Coffee Hour. This is an open thread so grab something to drink and sit a spell and let us know what is new with you. I am battling a nasty virus so Nurse Pixie says I have to stay in bed. That means new recipes of course. Here are a few new ones.

Christmas Eve Cinnamon Vanilla Creamy Custard Pie

1 9-inch pie crust

3 large eggs

3/4 cup granulated sugar

1 teaspoon pure vanilla extract

12 ounces evaporated milk

1/2 teaspoon ground nutmeg

1 teaspoon ground cinnamon

1/8 teaspoon salt

Heat the oven to 400°F.

Bake the pie crust for 10 minutes and let cool.

In a medium bowl mix together the sugar, milk, eggs, vanilla and salt together. Pour into the crust.

Mix the cinnamon and nutmeg together and sprinkle over the top of the pie.

Bake for 30 to 35 minutes or until a knife inserted into the middle comes out clean.

If the edges start to get too brown cover with aluminum foil or a pie crust cover.

Makes 8 servings

Jalapeño Cilantro Ranch Dressing

1 large jalapeño pepper - seeded and diced

1/4 cup cilantro leaves - finely minced

3/4 cup sour cream

3/4 cup mayonnaise

3/4 cup buttermilk

2 tablespoons white wine vinegar

1 small clove garlic - minced fine

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

1/8 seasoned salt

Mix everything together and store in a jar with a lid. Refrigerate.

Makes 8 servings

Bacon Pinwheels

10 ounces refrigerated pizza dough

1/2 pound bacon - diced

2 cups pizza cheese - shredded

10 ounces baked beans

14 1/2 ounces diced tomatoes with green peppers - drained

4 ounces green chilies - minced and drained

1 small onion - minced fine

2 cloves garlic - minced fine

1 teaspoon chili powder

1/4 teaspoon cumin powder

6 ounces no salt added tomato paste

Cook the bacon until crisp and crumble.

Cover the back of a baking sheet with plastic wrap. Spread the pizza dough in a rectangle to cover the baking sheet.

Mix the bacon, tomatoes, green chilies, tomato paste, onion, garlic, chili powder and cumin together.

Spread the refried beans over the dough.

Spread 1/2 of the tomato mixture over the beans. Sprinkle with 1/2 the cheese. Repeat with the remaining tomatoes and cheese.

Using the plastic wrap roll up the dough lengthwise into a tight log. Pinch the seams together.

Seal the roll tightly in the plastic and chill in the freezer for several hours. When firm transfer to the refrigerator overnight.

Heat oven to 400°F.

Remove the plastic wrap and cut the log into 32 slices. Put on a greased baking sheet.

Bake for 15 minutes.

Makes 32 servings

Jelly Bean Cookies

1/2 cup honey

1/2 cup molasses

1/2 cup dark brown sugar - packed

1 large egg

1 teaspoon baking powder

1/2 teaspoon ground ginger

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon ground cardamom

1/2 teaspoon ground cloves

1/2 teaspoon ground nutmeg

1 cup jelly beans - sliced

3 cups all-purpose flour

Heat the oven to 375°F. Grease the baking sheets with vegetable oil spray.

In a large bowl mix the honey, molasses and brown sugar until creamy. Add the egg and mix well.

Add the flour, baking powder, ginger, baking soda, cardamom, cinnamon, cloves and nutmeg. Mix well.

Fold in the jelly beans.

Drop by rounded teaspoons full onto the baking sheet and flatten slightly.

Bake for 11 minutes. Cool on a rack.

Makes 40 cookies

After Thanksgiving Turkey and Cranberry Pizza

20 ounces refrigerated pizza dough

1 small shallot - minced fine

1 clove garlic - minced fine

8 ounces no salt added tomato sauce

6 ounces no salt added tomato paste

14 1/2 ounces diced tomatoes with basil, garlic and oregano - drained

1/8 teaspoon crushed red pepper flakes

1 teaspoon Italian seasoning

1/2 teaspoon seasoned salt

1/4 teaspoon seasoned pepper

1 pound turkey - shredded

1 cup sweet potatoes

1/2 cup cranberries relish

2 cups pizza cheese - shredded

Vegetable oil spray

Heat the oven to 400°F. Spray 2 pizza pans with vegetable oil spray and divide the dough between them.

Mix everything except the cheese together and divide between the 2 pans. Cover with cheese.

Bake for 18 minutes.

Makes 16 servings
