Protest Connections

We maxed out on protests this week, with three. Saturday in Santa Rosa was the largest, with 5,000 people. Moving into Courthouse Square, we saw a group singing. Ah, there was Diane, from our postcard group. As I sat in front of the speakers, I felt a tap on my shoulder. It was Kossack jck. After the protest we headed to nearby DarBar (Indian) restaurant. There at a table were about 15 folks from our post carding group. One woman looked familiar, but not from the group. We connected. Amazingly it was Kossack Liberal Spaces, who lives in San Francisco, and whom we know well (after our memory was jogged). Married to Kossack Citisven. Turned out she is a good friend of T. from our postcard group, who we’ve known for years. An almost impossible coincidence. Impromptu meetups were planned.

I was asked for the recipe for the Butternut Squash Gratin we served this afternoon.

3 ½ cups squash, peeled, cut into 1 inch cubes (that’s the labor intensive part)

2 tablespoons olive oil

½ stick butter

3 cups chopped onions (or leeks)

1 ½ tsp sage

6 oz cream cheese (this is a key ingredient)

1 cup whipping cream

½ cup chopped nuts

1 1x7 inch buttered baking dish

Preheat oven to 400º

Place squash cubes in a bowl and toss with oil, salt, and pepper

Spread on rimmed baking sheet and roast till just tender and beginning to brown

Saute onions in butter until tender, sprinkle with salt, pepper, and sage

Layer ½ onions, ½ squash, ½ cream cheese Repeat.

Preheat oven to 375º. Pour cream evenly over dish and sprinkle with nuts. Bake till heated through and bubbling, about 40 minutes.
