New Day Cafe: Can Man Live on Cabbage Soup Alone? [1]

Good morning, Newdists. I’ve been on a cabbage soup kick lately. I’ve been trying to eat better than I have for the past several weeks, and cabbage soup seemed nutritious enough. I’m about to finish off my second pot of it, and I’m probably going to make a third this week. Before you make a fart joke, cabbage doesn’t really do that to me (nor do beans, for that matter).
I use Chef John’s cabbage roll soup recipe, with some adjustments. The first time, I doubled the ground beef because I wanted more protein. It also calls for ½ cup of butter, which really spiked the saturated fat, so I used ½ cup of olive oil instead (good choice). The second time, I used the olive oil again, but I used ground turkey in place of beef. If anything, I think I may like the turkey better. But it really doesn’t matter. The cabbage is the star of this show.

This time around, I’m thinking about using wild rice instead of jasmine. Also, what if I added a legume? The mind reels. LOL
I can’t just keep eating cabbage soup. Well, I guess I could. But it’s made me realize that I really like cabbage, yet I don’t have any cabbage recipes other than this. Aside from cabbage rolls (what the soup is based on, and entirely too much work for me), do you have any good cabbage-centric recipes? Share them below if you do! Because man probably shouldn’t live on cabbage soup alone. Although, maybe it’s good practice for the depression we seem to be hurtling toward...
