Good morning, Newdists!

We’re only a week in (you know what I’m referring to), and it feels like it’s been a year. My mental (and physical) response is familiar to me, and not just because I lived through his first presidency. What I’m feeling is almost identical to what I felt when I lived with a narcissistic abuser, which makes sense, considering...well, you know.

I have not handled any of this particularly well, ever since November. I’ve spent the last month inside a weed vape cloud, eating horribly and not getting regular physical activity. I’m a human being living through a traumatic time, and I’m giving myself grace and not beating myself up over it.

But still. Time to snap out of it. Life goes on, and will continue to do so at least into the foreseeable future. I can’t control what is happening externally, but it is time to reimpose control over my own life.

This week, I am pulling myself back to basics. The BF and I both are, starting with our meals. We spent yesterday cooking meals for this coming week, since meal prep helps keep both of us on track with healthy eating. Longtime Newdists probably know that I lost a decent amount of weight, mainly sticking to a “Mediterranean” eating plan. I still try to follow the principles of the Mediterranean diet when I can, but cooking with the BF has also made me appreciate the Asian formula for healthy eating: meat + rice + veggies. In that spirit, I made a bulgogi meal prep yesterday using one of our favorite recipes:

The macro I’m going to really keep my eye on is protein, with my main goal to get as much as I can in as many ways as I can. This particular meal prep comes in at about 55 grams of protein. Not bad!

I’ve made this bulgogi so many times, and while it might be a shortcut version, the flavor is just about spot-on. It does take a while to make, mainly because the mushrooms and onions give off water and I like to cook off all the liquid. But it’s worth the wait. I use grass-fed 85/15 ground beef, which is the perfect amount of fat to coat the rice when you mix everything together in the bowl, but not so much that it feels fatty.

For us, this makes six meals:
