Kitchen Table Kitbitzing, Jan. 3, 2025: Let’s organize a Portland, OR meet up this month [1]

It’s been too long! We need to connect with each other. Political chaos will be magnifying this year and we will need the comfort of visiting with likeminded people. I thought I would kick things off by organizing a midday meet up at one of Portland’s food truck pods. We will be in open air but will make sure there’s shelter in case of rain.
Portland’s food truck scene is something of legend. We have culinary schools in Portland and the little mobile kitchens became a way for young culinary graduates or cooks from other countries to open a business without the heavy financial hurdles of a brick-and-mortar restaurant. And with several food trucks parked in a “pod”? Public space can become kind of magical. Behold:

Here are three large pods on the SE side of town to consider.
Springwater Cart Park (formerly Cartlandia) has 30 food trucks and some covered seating (Ann and I will check if it is heated). At 8145 SE 82nd Ave, it would be convenient for those traveling to the meet up on the 205 freeway.
Hawthorne Asylum Food Carts at SE 10th and Madison has 20 food trucks, covered seating and a fire pit.
CORE: Collective Oregon Eateries is at 3612 SE 82nd Ave, again convenient to the freeway. It has about 20 vendor and indoor seating.
I am familiar with the Springwater pod but am absolutely intrigued by the other two. Have you been to any of these?

I also urge other areas to organize meet ups. We will need each other’s company this year. It’s bound to be an emotionally challenging time.
