Kos Diabetes Group: Many Uses for Pork Rinds [1]

Okay, before people start complaining, I know pork rinds aren’t for everyone. If you’re vegetarian/vegan or if you have high cholesterol or are watching your sodium or fat intake you probably will want to take a pass on them. However, pork rinds can be very useful for diabetics as they have no carbs and 18g of protein in a half ounce serving. You can find them online and at your local grocery store or Walmart.
Pork rinds on their own can be a good snack (they come in flavors now!) because of the low amount of carbs. But they have many other uses and I just discovered a few new ones. You can purchase pre-crushed crumbs or you can buy a bag of pork rinds and crush them yourself in a blender or with a rolling pin (depending on what you are using them for and how fine you want them crushed.)
I’m not sure when I first became aware of pork rind panko but I first started using it to make breaded pork chops and oven fried chicken. I’m sure I’ve been doing it for at least a couple years. I mix the pork rind panko crumbs with grated parmesan cheese and coat the chicken or pork chops. I usually use the center cut boneless chops and either boneless skinless chicken breast cutlets or tenderloins. I put the coated meat on a tray and put it in the oven to oven fry it. Since I use smaller cuts of meat it usually only takes about 20 minutes at 425 to cook through and becomes wonderfully brown and crispy. You could use pork panko to bread anything like eggplant, zucchini, fish, shrimp, dill pickles, mozzarella sticks – you get the idea.

Besides being used as a low carb breading, you can use pork rinds for a lot of other things. You can use them to make low carb trail mix, snack mix, puppy chow (also called muddy buddies), krispy treats, and pancakes.
