Hey Mom and Dad, can we have chicken cutlets tonight? -- K2, Saturday afternoon
We had to say no because (1) it was already mid-afternoon; (2) I didn’t have chicken breasts; and (3) I didn’t have the energy to make this dish at that moment. But we promised “soon” and this morning I picked up boneless skinless chicken breasts while shopping.

Chicken cutlets are a family favorite dish, but we don’t have it regularly. It’s fairly time- and labor-intensive. The chicken needs to be cut, pounded flat, dredged in flour, egg and bread crumbs (keto flour, egg and crushed pork rinds for my diabetic-friendly low-carb version) and then fried.
It also leaves the stove covered in oil spatters, which means I need the next day to get the place really cleaned up, and that coupled with teenaged boy appetite means we go big when we have cutlets — generally 8-10 breasts’ worth and several hours of prep and cook time. Mr. Brillig and I have the coordination down to a science… my role is prepping the cutlets and pounding them all flat, separating into two piles… the regular breaded pile for the guys and my smaller, individual keto stack. Mr. Brillig is dredge and fry guy, and he has perfected the art of perfect crust.
If I didn’t tell you this wasn’t the traditional breadcrumb coated cutlets, you might not have noticed...
This is my plate from tonight… that’s two pork rind-coated cutlets on a bed of palm hearts (instead of linguini) with pasta sauce and a glass of red to accompany. As always, it was delicious and I had to get up and put the leftovers away before I snacked on delicious chicken all evening. I had a pecan pie shortbread cookie for dessert, but that’s the subject of my Friday Kos Diabetes Group diary so tune in there for the details.
I have a sink full of dishes to tackle either later tonight or tomorrow morning, but you know what? It was TOTALLY worth it both in the tast of our dinners, and in the “thanks guys” from K2 as he filled his plate for the second time.
We have a few foods that are worth the effort to prepare. One that comes to mind is a holiday chocolate mousse that takes two days and a LOT of chocolate, cream and butter to make but is sublimely delicious and worth every moment of prep. Now that I can recreate it using sugar-free chocolates that don’t spike my blood sugar, it’s even better :).
