IAN: It's National Nachos Day! [1]
['This Content Is Not Subject To Review Daily Kos Staff Prior To Publication.']

There was this little Mexican restaurant in Manhattan’s E. 30s with the best nachos. Two of us could split an order of them and call it lunch. Then our offices moved, and I never got back there.
In the spirit of the day, let’s trade nacho favorites.
Of course, nachos are considered a major Super Bowl snack, so why is their “day” in November? Makes no sense...
Nachos were invented in Piedras Negras, across the border from Eagle Pass, Texas. Ignacio “Nacho” Anaya, the maÎtre d’ of the Victory Club restaurant, came up with them one night when a regular from Eagle Pass asked for something different for her friends.
Here’s an amusing history of the dish. [12:02]

Hi! I’m Itzl!
As you can see by Itzl's concerned look, this group is for us to check in at to let people know we are alive, doing OK, and not affected by such things as heat, blizzards, floods, wild fires, hurricanes, tornadoes, power outages, or other such things that could keep us off DKos. If you're not here, or anywhere else on DKos, and there are adverse conditions in your area (floods, heatwaves, hurricanes, etc.), we are going to check up on you. If you are going to be away from your computer for a day or a week, let us know here. We care!
IAN is a great group to join, and a good place to learn to write diaries. Drop one of us a PM to be added to the Itzl Alert Network anytime! We all share the publishing duties, and we welcome everyone who reads IAN to write diaries for the group! Every member is an editor, so anyone can take a turn when they have something to say, photos and music to share, a cause to promote or news!

Because chilaquiles are probably the forerunners of nachos, let’s start there.
Chilaquiles Verdes
Chilaquiles Verdes is a delicious meal whether enjoyed for breakfast, lunch or supper. Chilaquiles Verdes are made with crispy fried corn tortilla chips then smothered in a delicious tomatillo sauce and topped with queso fresco or cheese of your choice, then topped with Crema for an added plus…. How to Make Corn Tortillas
Recipe is in the YouTube description. I’m with her, btw, on the subject of yellow corn tortillas. They just have more flavor than the white ones. [18:14]

Of course, the variations for nachos are legion — use your imagination! So at this point, let’s enjoy some frivolity to go with the chips...
