The Ohio History Center in Columbus, Ohio includes the Mary Eloise Green Collection which spans two centuries of food preparation and presentation which explores the evolving role of women in the domestic sphere as well as changes in kitchen technology over time. Professor Green (1903-2005) spent 33 years teaching food and nutrition courses as The Ohio State University.
