What flowers are edible?

From personal experience, garlic blossoms, lightly sautéed, are delightful — it’s a very delicate taste. (These are not the scapes, but actual little white flowers. The sprig came as the garnish to the appetizer I’d ordered.) Day lilies are very nice in salads, and I think that’s how I had nasturtiums, too. Oh, and dandelion flowers make wine, as Ray Bradbury pointed out. Below the fold, there are some ideas. But you don’t want anything that has been sprayed! so it’s best if you can grow your own, or buy from an organic farm.

And be careful:

Just as you wouldn’t go grazing on any old leaf instead of lettuce, some flowers are very much inedible. Blame Instagram, which has hot-housed the edible flower trend, for promoting toxic, or even potentially lethal, flowers – such as rhododendron – shown adorning smoothies and puddings. Edible flowers include lavender, roses, hollyhocks, pelargoniums, nasturtiums and pansies. Some look similar – jasmine is fine, but false jasmine is poisonous; you can eat the flowers of garden peas, but not sweet peas. Anyone allergic to pollen should steer clear of them all. www.theguardian.com/… [emphasis added]

Violets and roses are also edible, of course: the petals can be candied and used to help decorate a cake or pastry. Before vanilla extract was widely available, rose water often flavored desserts. And hibiscus flowers (flor de jamaica in Mexico) make a nice tart iced tea or agua fresca. But there are many more. For the purposes of this diary, I’m sticking to flowers I personally know are edible.

Do you like hibiscus tea? It’s also known as sorrel tea, and it has a nice tartness to it. I like it just plain, iced, but agua fresca looks great too. And those tacos!
