ICED TEA — A Long and Winding Road [1]

Tea is a complex subject. Iced Tea, in many ways, even more so.

Common types of iced tea are black, green, and oolong (烏龍茶), as well as many herbal varieties. Iced herbal teas are especially popular in the hot summers, where "yin"（陰）or cooling herbs are used to make tea such as chrysanthemum and kuding tea (苦丁茶).

I hope that quotation actually makes sense. Personally, I do not use ice with my Iced Tea, nor do I fuss about chilling it.

All of which I hope inspires readers to share preferences. Please share your recipes, and stories …fond recollections.
