Kos Diabetes Group: Keto Orange Chicken [1]

Hello people! Contrary to popular belief, I have not fallen off the face of the earth. Back at the end of June we had a catastrophic water event in our basement — ground water seeping in due to a non-functioning drain system and then a broken pipe in the ceiling from the outside hose spigot. We fixed the pipe and replaced the drainage system along with a bunch of drywall, repainted, and put in new carpet. Just two days ago we finally got out furniture back out of storage and unloaded the POD we filled with all of my husband’s role playing game books, board games, his large library of science fiction books and scholarly books he uses for research along with all the tools and other miscellaneous stuff that was in the basement. We will be unpacking boxes for a while but we are closer to normal than we’ve been in about three weeks.

Today I want to share with you a really REALLY simple recipe to make Orange Chicken like you get from a Chinese restaurant. You only need a few ingredients and it takes very little time to make. I found this recipe on YouTube by The Keto Twins. They won’t allow me to embed the video but you can find it here.

HOW TO MAKE IT

You will need some chicken nuggets. In the video I believe they use RealGood lightly breaded chicken nuggets which you can get at WalMart ($7/20 oz bag). They say they have 2g net carbs per serving. I was out and so I grabbed a 30 count nugget from ChickFilA because I know I can eat them without my glucose going crazy. I ate some of the nuggets for lunch and used the rest to make the Orange Chicken for my husband and I for dinner.

For the sauce you will need sugar free orange marmalade and sugar free BBQ sauce. I found Smuckers sugar free orange marmalade at my grocery store. G Hughes makes a good sugar free BBQ sauce but you can use whatever sugar free brands you like.

Cook (or in my case reheat) the nuggets according the the package directions. In a small microwave safe bowl mix 4 parts orange marmalade and one or two parts BBQ sauce. I used 4 T of marmalade and 1 T of BBQ sauce and it was enough to coat 20 nuggets well. You could certainly make more sauce if you want. Microwave the sauce until the marmalade is melted and you can mix it thoroughly. Toss it on the nuggets and serve them over riced cauliflower or whatever low carb rice or noodle side you prefer. Top with some chopped green onion tops.

My husband and I both really liked this so I will be making it again. It had a really good orange flavor with just a little kick from the BBQ sauce. You could always add red pepper flakes if you like your food a little hotter. I used riced cauliflower but I may try a fried rice type cauliflower the next time or mix the plain riced cauliflower with a little long grain and wild rice.

It’s really good to be back. I should be able to do a regular diary next week.

I recommend watching some of the Keto Twins other videos. They try all kinds of keto recipes and then tell what they think about how easy they were to make and how well they tasted.

I can’t believe I messed up the poll. The third choice should say “I hate Chinese take out” I can’t fix it without re-doing the poll and voiding all the votes that are already there.
