Celery
We always have celery in our refrigerator. I’ve mentioned before the discovery that, wrapped in aluminum foil, it lasts and lasts without going limp. Folks reported that this was true. I use a lot in tomato aspic and apple/celery salad, soups and meatloaf. For the last few weeks there was none to be found in our grocery stores and even our farm stand. I googled and it was reported that there had been crop failures in California.
Today I was at the store and there was suddenly a good supply. I bought two stalks in case the supply was temporary. Once home I reported my good luck to Mrs. side pocket, who reported similar success at another store! So now we have more celery than anyone. I checked for celery recipes and found many, but most require other ingredients as well.
There was one for celery and chickpea sandwiches. Well, maybe. The most interesting was one for making pickled celery. Might be even better than stuffed cumquats (h/t to Buddy Hackett). All suggestions will be welcomed.
