Slipping in here at the last minute. Realizing it is the Plumber family’s night ...but TLO is giving lessons at the ranch and remembrance is taking care of grandma. Despite having worked today and working the grill tonight, it is left to me.
Tonight is the 7th night of Hanukkah. No latkes tonight but did make a small batch on night 1. After 20 years of helping my father-in-law I’m fairly well-practiced. Less is more...keep it simple. 2 potatoes grated, ½ an onion grated, 1 egg, 1-2 tablespoons of flour and about ¼ cup of matzo meal. A bit of salt and pepper.
One item I changed up is squeezing the water out of the potatoes. After grating I throw them in a strainer inside a larger bowl. Squeeze out what I can into the bowl then roll them up in a towel (or paper towels) and get as much water out as possible. Then drain the water out of the bowl but leave the bit of yeast that settles to the bottom. Throw everything in the bowl and mix.
Another tip is to get the pan and olive oil nice and hot. Often the first batch comes out a bit funky. With the oil hot every latke came out perfect. Take a small amount of the mixture to form a latke about 3” diameter and 5/8” thick ...again squeezing out any liquid into the sink.
Then just fry until golden brown ...yummy.
