Where’s the Beef…..or pork?

Of course, growing up I was aware of the term “vegetarianism”, just as I had heard of pantheism, romanticism, modernism, isolationism, and many more. But no one in my early life practiced it. Both in college and later in the mess-halls of the Navy, you ate what you were served, and glad of it.

Later I met a guy who was segueing into being a vegetarian, and talked about it at length. Much later I ran into him when I was with a group, and introduced him “as a vegetarian”. He was offended, and stated that he was much more than that.

The Wikipedia article has a huge amount of interesting info on the practice, including the social, ethical, and environmental aspects. “Research suggests that, at least in the United States, vegetarianism has a high turnover rate, with less than 20% of adopters persisting for more than a year.[209] Research shows that lacking social support contributes to lapses. A 2019 analysis found that adhering to any kind of restricted diet (gluten-free, vegetarian, kosher, teetotal) was associated with feelings of loneliness and increased social isolation.”

Then there’s this, from a pretty smart guy: “Albert Einstein once wrote “Nothing will benefit human health and increase the chances for survival of life on Earth as much as the evolution to a vegetarian diet.”

I usually eat meat in two meals a day, and if I go out for breakfast, it could be three. And yet I’m totally comfortable with vegetarian meals if that’s what there is. The one-pot pasta, which I detailed in the KTK of September 25, lends itself to a flexible vegetarian dinner with ease.

My only beef with the special food requirements of today is in entertaining. So many people can’t eat or must eat this or that, a meal, or even hors d'oeuvre appetizers, might require a 10 page listing of requirements and special food needs.
