Last week I asked what you would like to see in this, the second anniversary edition and you guys were of no help whatsoever. With 18 votes cast, it was split 6-6-6 (gees, that sounds ominous) for a recipe, some jokes or don’t care. So I guess this will be a (low carb) smorgasbord with a little bit of everything to make everybody happy.

Let’s start off with a recipe. I don’t remember exactly where I found this. It’s fairly common recipe and lots of people have it on their websites.

Flourless Peanut Butter Cookies

Prep: 10 min Cook: 10 min Total time 20 min Yield: 18 cookies

Ingredients

1 cup natural peanut butter 1 cup sugar alternative 1 teaspoon pure vanilla extract 1 large egg, lightly beaten Coarse sea salt, for sprinkling

Directions

Preheat the oven to 350 degrees F and place the racks in the upper and lower third of the oven. In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies. Bake until golden around the edges, about 10 minutes, switching the position of the sheets halfway through baking. Transfer to racks to cool. Repeat with the remaining dough.

These cookies have 88 calories each and only 3g of carbs. If you like to walk on the wild side, add a chunk of zero sugar chocolate to the top of each cookie. Yum!

Just a little good news before I go. I had my annual physical earlier in the week and everything is hunky-dory --blood pressure, cholesterol, and the all important A1c (currently 5.6). I’m good to go for six months.

I’d like to thank all of you for sticking with me and dropping by each week. I’ve enjoyed writing these diaries for you. Since the holidays will be here before we know it, I’m starting to work on a special low carb cocktail diary. Look for it in November before Thanksgiving.
