Let’s start with a cold soup for a hot day in August: Gazpacho Andaluz.

The secret to giving the zucchini a great texture, is to season it with sea salt after you cut it and letting it sit for 30 minutes. This helps release some of the water in the zucchini. A Spanish Tortilla is an omelet, not dissimilar to Italy’s frittata. Here is a Tortilla de Boniato, or a sweet potato omelet:

This omelette is very similar to the classis Spanish omelette, known as tortilla Española. With the only difference being that we´re using sweet potatoes instead of regular potatoes. And let me tell you, those sweet potatoes, truly elevate the flavors in this omelette. spainonafork.com/...

How about a nice chickpea stew? Potaje de Garbanzos de Baza.

This dish hails from the small town of Baza, which is located in the province of Granada in the south of Spain. What separates this stew from other stews, is the thickner that is used. It seriously elevates this dish to the next-level. To make this dish, I used jarred Spanish chickpeas. Which is the same thing as the cooked ones you get in a can. But you can totally use dry chickpeas here. Just soak them in water for 24 hours and then boil for 2 to 4 hours or until done. spainonafork.com/...
