Lentil and Kale Salad

I have a lot to say about this before getting to the recipe.

The lentils are optional. They add a lot of carbs and protein to the green salad and make it more satisfying by itself, leave them out if you’d prefer a lighter side salad. “French lentils” aka “French Green Lentils” are much smaller than ordinary green lentils and cook quickly. These are from the same heirloom bean vendor as the cranberry beans I wrote about earlier.

Kale is much tougher than most greens we eat raw. Start by cutting it small. Plenty of acid will help tenderize it, and so will plain physical force. A chef told my friend Joan that his secret was marinating the kale in lemon juice first. The recipe below says “You want to gently bruise the leaves of the kale”; I think I’d leave out the “gently”. My nice salad tongs, pictured below, are very solid pieces of cast aluminum, fine tools for beating vegetables into submission. I didn’t “stir roughly”, I pounded on the kale.

Champagne vinegar might be sharper than the white wine vinegar that I substituted. After tasting the salad I added the juice of 1 lemon and was much happier.

(Lentil and) Kale Salad

from Food Network — serves 4 to 6

1 bunch kale, stemmed and sliced 1 shallot, thinly sliced 3 tablespoons champagne vinegar 1 tablespoon honey 1 teaspoon Dijon mustard 1/4 cup extra-virgin olive oil Kosher salt and freshly ground black pepper 2 cups cooked French lentils (about 2/3 cup uncooked) 1/2 cup crumbled feta cheese 1/2 cup dried cranberries

Add the kale and shallots to a large bowl and set aside. Whisk together the vinegar, honey and mustard. Slowly whisk in the olive oil and season with salt and pepper. Pour over the kale and shallots and toss and stir roughly with tongs, about 3 minutes. You want to gently bruise the leaves of the kale. Once the kale looks soft, toss in the lentils, feta cheese and cranberries. Cover with plastic wrap and marinate 1 hour before serving.

There’s still some of this left, I’m not sure what the rest of dinner will be. What’s for dinner at your place?
