This recipe could be used as part of a 12 course meal known in Polish as
Wigilia, or on its own.  Wigilia is eaten after sundown on Christmas Eve.
This tastes better if you make your own sauerkraut
(but that's another recipe).

IG "1 oz" "dried mushrooms" "30 g"
(or use
AB "\(14 lb" "100 g"
fresh mushrooms)
IG "\(12 cup" "warm water" "120 ml"

IG "2\(12 Tbsp" "butter" "50 g"
IG "1\(12 lbs" "sauerkraut," "700 g"
rinsed and drained
IG "1/3 cup" "water" "80 ml"
IG "2 Tbsp" "flour" "30 ml"

Soak the dried mushrooms in \(12 cup of warm water for 1 hour.

Saut\z\(aae mushrooms and onion in butter in a skillet 3 minutes.

Add sauerkraut to mushrooms; cook and stir for 10 minutes.

Blend 1/3 cup water into flour.  Mix with sauerkraut and simmer for
15 minutes. Season to taste with salt and pepper.

I usually like to add \(14 cup of dark rum after cooking.  That reminds me
of the recipe I have for \fIbigos\fR (similar in construction but with more
ingredients).
