COLD CANTALOUPE SOUP                   Servings:

1   large     ripe cantaloupe          1/2 small whole nutmeg, finely grated,
             juice of 1 lemon or lime     OR 1/4 tsp. powdered nutmeg
1/2 c.        granulated sugar (divided)
1   c.        heavy cream                  rind of 1 lime, finely grated

   Quarter, peel and remove seeds from cantaloupe.  Cut into small pieces
and place in a blender.  Pour in lemon or lime juice and 1/4 cup sugar.  Blend
on highest speed until completely smooth.  In a large bowl, beat cream,
remaining sugar, and nutmeg until thick and heavy.  Gently fold in cantaloupe
and add grated lime rind.  Do not overmix.  Pour into bowls, and chill.
