KENYAN PEANUT BUTTER STEW              Servings:

2   med.      chopped onions           3   T.    oil or butter
2-3 cloves    garlic, crushed          1   tsp.  salt
1             chicken, cut in pieces   3-4       mashed tomatoes
1/2 tsp.      cayenne pepper           1 in. piece grated fresh ginger
2   c.        water                    2         chopped green bell peppers
3-4 T.        peanut butter

  Saute onions in butter or oil until golden.  Add garlic, salt and
cayenne pepper.  Stir 2-3 minutes.  Add green peppers and chicken.  When
all chicken pieces are brown on every side, add tomatoes and water.  Simmer
10 minutes.  Thin peanut butter with a few spoons of hot liquid and add to
pot.  Simmer until meat is well cooked.  Serve with collard greens and rice.
