ELEPHANT TRUNKS (Oatmeal Cookies)      Servings: 5 dozen

1   c.        shortening               1   c.    brown sugar
1   c.        sugar                    2         eggs
1 1/2 c.      flour                    1   tsp.  soda
1   tsp.      salt                     3   c.    rolled oats
1   tsp.      vanilla                  1/2 c.    chopped nuts

   Cream shortening and sugars together.  Add eggs and vanilla.  Sift
flour, soda and salt together, then add.  Add oats and nuts.  Cut
2 big pieces of waxed paper, and roll dough into it.  Refrigerate
overnight.  Bake at 400F for 8-10 minutes.
