Chicken with Orange sauce
Here are a couple of 'tried and yummy' recipes for chicken with an
orange sauce:
******* Orange Curried Chicken (for two) *******
One Chicken brest - split
1 teaspoon curry powder
2/3 cup orange juice
2 Tablespoons lemon juice
1 teaspoon honey
1/2 teaspoon dry mustard
1 Tablespoon grated orange rind
Salt and pepper to taste
Rub the chicken with curry powder on both sides. Combine the rest and
simmer for 5 minutes. Put the chicken in a baking dish, skin side down
and pour the sauce over it. Bake at 375 for 30 min. Turn the chicken,
baste with the drippings. Bake 20 more min.
****** Yogurt Chicken with Orange (for 6 to 8) *****
4 chicken brests - split
3 - 4 large oranges used to make:
1 teaspoon grated orange peel
3/4 cup orange juice
Orange slices
4 Tablespoons Butter (or margarine)
1 Large onion - chopped
2 cloves garlic - minced or pressed
1/2 teaspoon cumin
1/2 teaspoon coriander
1 Tablespoon sugar
1 Tablespoon cornstarch
1 cup plain yogurt
Brown chicken in butter, and remove from pan. Cook onion and garlic in
drippings until the onion is limp. Stir in cumin, coriander, sugar,
orange peel and orange juice. Put the chicken back in pan and simmer
covered until the chicken is done (about 15 min.). Mix cornstarch and
yogurt and stir into the pan drippings. Cook until thickened. Pour
sauce over chicken and garnish with orange slices.
