Charcoal Broiled Red Snapper

I also have wondered what happened to net.cooks, but, as I suspect is
also the case with many of you, have not entered anything recently
either.  So............ here is the most recent big experiment:

       CHARCOAL BROILED RED SNAPPER

Ingredients:
       1 whole Red Snapper, or any similar fish of your
       choice, cleaned but not boned

       1 lemon

       ~1/2 stick butter

Method:

Use 'indirect heat' in a Weber kettle or similar barbecue, and add a
few hickory chips if you wish.  Make a pan for baking out of
aluminum foil.  Spray foil with 'Pam' to prevent sticking.  Place
fish in pan, and cover with thin slices of lemon.  Place on grill and
baste with melted butter.  If heat is sufficiently diffuse, no need
to turn - just baste frequently til meat flakes from bones.  (I think
this is about 20 min. per pound, but I'm not sure.)  Try to not
overcook (I did slightly) or fish will be dry.  Add salt and pepper when
done.

I have read a lot of other recipes similar to this which call for
various stuffings, etc.  I have not tried them, but would be interested
in hearing from those who have.  I decided to take the 'simple is best'
approach for this try.
