Belgian Waffles
The following recipe is taken from the Herter's cook book
that was recently described on the net. The original text
prattles on for about 4 pages talking about how this treat is
served at all the World Fairs and that the fair in New York was,
in the opinion of the author , a bummer. Finally, however, he
gets around to the following:
Belgian Waffles ( also called Gaufres )
*** Ingredients:
2 1/4 cups of cake flour
3/4 cup of white sugar ( original recipe used honey - there
was no sugar around then. )
1 cake fresh yeast ( original recipe used fermenting beer )
3 whole eggs
1 tsp. vanilla ( original recipe used none - it was not
known in Europe then )
1 cup lukewarm milk
1/4 tsp. salt
2 tbsp. butter
*** Topping
1 ounce powdered sugar
1 pint of whipping cream
1 tsp. almond extract
1 half pint of fresh strawberries or strawberry jam
4 tbsp. sugar
*** Assembly Algorithm
Take a large mixing bowl and place the flour, salt, and
sugar in it. Mix well. Make a hole in the center of the
flour. Mix the yeast into the lukewarm milk and place in
the hole in the flour. Beat the eggs and add to the hole.
Finally melt the butter and place it in the hole as well.
Mix all this together ( the author recommends using your
hands ) to a consistency of a cream sauce ( thicken/thin
with flour/milk ). Let the mixture stand for about 4 hours
while covered with a moistened cloth. The mixture will
raise a great deal so start out with a fairly large bowl.
Oil your waffle iron and cook the waffles as you normally
do.
This is a really great waffle if you stop here and just
serve it with maple syrup and butter, but if you really want
to load on the calories, read on.
*** Finishing
Whip the cream and add the almond extract and four tbsp. of
white sugar. Spread a generous layer of whipped cream and
top with the strawberries. Dust the top of the waffle with
powdered sugar.
This is a super dish and one that really brings rave
reviews. It does, however, have one drawback and that is
its long preparation time. The four hours to raise the
dough can be shortened somewhat by putting the bowl in an
oven that is warmed by only the pilot light. Even so, it
still takes a couple of hours to raise the waffles so
perhaps instead of using this recipe for breakfast, you may
want to use it for Sunday brunch instead.
