The two things I learned to do with HOT peppers is 1) dry them, 2) deep fry
them. I string them up in the kitchen and let them dry, and then grab one,
crumble it in my hand, and use it in whatever I'm cooking.

Deep frying them is good for a side dish or appetizer; this freezes very
well. I also barbecue larger banana peppers (hot ones), peel the burnt
skin, and freeze them for later consumption.
