Passover Kugel
               APPLE-MATZAH KUGEL

 6   matzahs           3/8 c  melted margarine (3/4 stick)
 4   eggs              1.5 t  cinnamon
75 t salt               .75 c  raisins
75 c sugar               1  c  chunky applesauce

Break matzahs into pieces and soak until soft; drain, but don't squeeze
dry.  Beat eggs and salt thoroughly.  Add sugar, margarine, and cinnamon,
and add to matzahs.  Stir in raisins and applesauce.  Turn into a 10-inch
casserole, dot with additional margarine, and sprinkle with cinnamon and
sugar.  Bake at 350 F (325 if you're using Corningware) for 45 minutes,
or until lightly browned.

This Passover recipe has always gotten nice comments.  The margarine keeps
the whole dish Pareve--but it seems to work as well with butter, if you
don't mind turning this into a milk dish.
