Baked Stuffed Caribou Heart
   This recipe  makes an unusually festive  dish that is sure to please
   even  the Morris' at  your table.   Try it on a  new date, she  will
   never forget  you, remembering you as the one  who truly had a heart.

        B A K E D     S T U F F E D     C A R I B O U     H E A R T

         1        Caribou heart         1   Cup  Bread crumbs
         1        Onion, chopped        0.5 Tsp  Poultry seasoning
         0.5 Tsp  Salt                  4   Tsp  Butter, melted

   Wipe heart clean and soak overnight in salted water.  Trim off blood
   vessels and fat.  Stuff cavity with dressing made by combining onion,
   salt, bread crumbs, seasoning, and melted butter.  Skewer and sew up
   heart.   Place  in roasting pan with strips  of salt pork over heart.
   Add  1 cup of  water.   Cover and  bake at 325 for  3 hours or until
   tender.  Enjoy with lots of wine!
