How cheep is cheep?  I use the recipie out of the Joy of Cooking,


You need 2 cups of dry white wine, a garlic clove, 3 tbs Kirsch,
1 tsp cornstarch and 1# gruyere cheese (alternatively you can substitute
1/2# ementhaler for 1/2# of the gruyere).  The total cost (amortizing
the Kirsch over several sessions) is ~$5-6 for 2-3 persons.   Oh yeah
you need some (2) baguettes.  I like to use sourdough bread since it's
available locally.  To prepare the bread:  cut into 1" cubes, making
sure that each cube has at least one side of crust.  Toast the bread
lightly in the oven.

Procedure:

Grate the cheeses, mix the cornstarch with the kirsh in a small tumbler.
Rub the garlic in a heavy saucepan.  Add the wine, and place over
medium heat.  Just when the surface of the wine is covered with fine
bubbles (NEVER let it come to a boil!) gradually add the cheese while
stirring constantly.  If you add the cheese too quickly you'll end up with
cheese flavored wine on top of molten cheese, take it slow and you'll
be well rewarded.  This is the only trick to making good fondue, as I see it.

Continue to add the chesse until your spoon  meets up with a slight resistance.
Next, stir in the Kirsch-cornstarch mixture (you may need to have more
than 1 tsp in the Kirsch).  Serve.

You can get the Kirsch cheaper if you make your own;  some stores sell
extracts which you  can mix with  cheap Vodka.
