RAISIN RICE PUDDING

      *         Here is a rice pudding recipe which was gleaned from  *
   *     the food section of the Detroit Free Press about a year ago.    *
   *     I thought rice pudding was something you ate if you were afraid *
   *     of taste, color, and consistency - - until I tried this!        *
   *                                                                     *

                          RAISIN RICE PUDDING
============================================================================

       Ingredients:
               4................eggs
               3/4 cup..........sugar
               2 cups...........milk
               1&1/3 cups.......cooked rice
               1&1/2 teaspoons..lemon juice
               1 tablespoon.....butter, melted
               1 teaspoon.......grated nutmeg
               2/3 cup..........raisins
               dash.............cinnamon


       Prodedure:
               Combine eggs, sugar, and milk in a bowl. Beat well.
               Fold in rice, lemon juice, vanilla, melted butter,
               nutmeg, cinnamon, & raisins.

               Pour the mixture into a greased, two-quart casserole,
               and put the casserole in a pan of boiling water in
               an oven preheated to 350 degrees Fahrenheit.

               Bake for 60 minutes, or until custard is set (jiggle
               the casserole -- if it acts like jello, it's set).

       Serves: Two greedy people, or 4-6 "normal" people.
