What you describe sounds exactly like an appetizer served in the Greek
restaurants of Chicago called Saganaki (sp?).  In other cities this dish
is served without the flames, but here all the Greek restaurants serve it
that way.  I don't know the name of the cheese they use.  It's a *great*,
dramatic way to start a meal.
