YARD (yet another "roquefort" dressing)
Here is my favorite salad dressing.  I suppose it by definition a
bleu cheese dressing, although it is not at all like

the dressings commonly served under that name.

BLEU CHEESE DRESSING

Place in a blender: 6 oz (3/4 cup) olive oil, 2 oz ( 1/4 cup) red
wine vinegar, 2 tsp freshly ground black pepper, 1/2 tsp salt, 2-3 oz
bleu cheese (about equal to a cube 1.5 in (35 mm) on a side).
Blend well.  Serve on salads and anyhing else it makes taste better
(I like it on ham sandwiches).

(The original recipe had one crumbling the cheese into the dressing in a bowl
with a fork.  I got very tired of making small lumps out of large ones and
used the blender. Voila!)
