Kababs and Mushroom Appetizer
The following two recipies were "recorded live" many years ago when a
graduate student colleague, a Jew born and raised in Syria, was making
dinner.  Judy Allen (long since lost track of her) wrote this down
while Al Chammah cooked. We have used these recipies with great
success for years.

               Chammah's Sikh Kabab

Leg of lamb (around 4lbs.)
5 garlic cloves, chopped
1 to 2 onions chopped
1/2 cup olive oil
1/2 cup soy sauce
2 cups red wine
* allspice
* oregano
* thyme
* pepper, red or black
       * the above all "to taste"
1 handful crumpled bay leaves

Mix all marinade ingredients together.  Add lamb in pieces.
Mix well and cover.  Let stand out of refrigerator at least
12 hours.
Skewer with vegetables, baste and barbeque to desired degree
(pink interior recommended).

               Chammah's Mushroom Appetizer

Chop finely(in proportions shown):
       mushroom stalks - 2 (left over from caps put on skewer with kabab)
       green pepper - 1
       scallion greens - 2
       onion - 1/2 or to taste
Cover bottom of a pan with olive oil.
Place following mixture over low heat*
3 pinches cumin
oregano - "salt on"
pinch cayenne pepper
1/4 cup red wine
dash lemon juice
salt
Mix in chopped ingredients and fry until tender - 15 min.
Serve on heated pita bread or crackers.
