Re: What to do with eggs
For omelets where you want to include some of the filling ingredients in the
crust (eggs), firm the top under the broiler.  This can give you a mini-souffle
if served immediately on a hot plate (beat the eggs rather longer.)
       Caution.  Use a pan that has a metal handle, or it will eventually
disintegrate under this treatment.
       This procedure leaves the moist soft egg in the centre of the
omelet rather than on top.  While not really a quiche, it can be sliced
like one.
