Sour Cream Pancakes
SOUR CREAM PANCAKES
                                      About 20 3-Inch Cakes
  My great-aunt Fay's Sour Cream Pancakes were a favorite
at great-uncle Edward's restaurant in Skokie, Illinois.  The
name is slightly misleading, since they contain more cottage
cheese than sour cream.
Combine:
  2 eggs
  1 cup cottage cheese
1/2 cup sour cream
1/8 teaspoon salt (a pinch)
1/4 teaspoon cinnamon
1/2 cup flour
1/2 teaspoon vanilla
Fry in
    butter
on both sides.  Aunt Fay says they should be turned twice
(fried again on the first side).  I usually can't wait to
sink my teeth into these delightful things, so I skip the
second turning.  It doesn't seem to make any difference.
