Spanish Wind Cake.
       This is a recipe that I have only made once, but it works.  When you
read it, you will know why it was only sane to do it once!

       12 egg whites
          vanilla flavor
          crystallized violets
      250 ml fresh (or frozen [arg!]) blueberries
      500 ml fresh double cream (can use whipping cream, but....)

       Whip the egg whites with a little vanilla to taste until very stiff.
       Pipe the stiff whites through a pastry bag with a small nozzel to
       make a tight spiral (lines touching) 8 inches in diameter onto a
       well greased cookie sheet.  Make another one.  Dry in oven at mod-
       erate heat, but avoid browning.  Make six eight inch rings of mer-
       ingue, and dry them also.  You now have the construction materials.
       Using a pastry brush moistened with a little egg white, make a
       cylinder consisting of one of the spiral plates and the rings with
       the egg white as glue.  Return to oven for a few moments to set.
       Whip the cream until it peaks.  Fold in the blueberries and fill
       the shell.  Put on the top using the method above.  Decorate with
       candied violets.  Enjoy!
