Egg Recipe

First, let me say that this is a great newsgroup, although I do
feel kind of guilty reading it while drinking a Sunkist and munching
on potato chips....

Anyway, so far all I've seen is mostly dinner recipes.  Anybody got
anything that's good for breakfast/brunch?  One of my favorites is
something called "Texas Eggs" or, my favorite name, "Bird Nests":

       For each serving, you'll need one slice of bread and an
       egg.  I usually use white bread, but wheat, etc. would
       work just as well.

       Get a frying pan, and put a LITTLE BIT of cooking oil,
       or grease, or bacon fat, or whatever you want to use
       in it and heat it up. (This is really good if you use
       leftover fat from cooking bacon right before).

       Cut a circlular hole out of the middle of the bread with
       a shot glass or something, and put the slice of bread into
       the frying pan.  Let the bread sit for a few minutes and
       start to get brown, then crack an egg into the hole which
       you cut out.

       Cook it that way for a while, then flip it over and cook it
       some more, until you get the egg/toast the way you like it.

       Voila!  Simple, but it's good, and fast.

Anybody else out there have any good recipes for eggs/bacon/breakfast?
In particular, anyone have a good one for Eggs Benedict?
