La Technique
There is a book called, I believe, "La Technique", which is essentially
a picture book of French cooking techniques.  About 20 or 30 recipes
discussed in step-by-step detail.  Also, my ca. early 50's copy of
Fanny Farmer has a great many general suggestions and instructions along
with the specific recipes; more than a few places it suggests a general
idea and then goes on to say "Improvise".  Don't know if later versions
are still like that.
