cooking techniques

       One cookbook that is particularly good for learning
technique is "James Beard's Theory and Practice of Good Cooking".
It has a chapter for each major method of cooking (i.e. baking,
boiling, braising), a concordance which covers nearly every type
of food, and an index arranged by cooking terms and methods,
rather than by recipe.  There are recipes in the book, but they
are there to give examples of the techniques being discussed.
Also, the book is well illustrated.  I believe it is available
in hardback, but I got my copy (paperbound) through Consumer
Reports for $10.00.
