Let me recommend Irene Kuo's "The Key to Chinese Cooking" -- it gives very
clear recipes for wonderful foods.  There's an introductory section as well
that discusses the principles of Chinese cooking, and gives several sample
recipes for each cooking technique.  She also includes extra steps that
really improve already excellent dishes, such as "velveting" chicken before
stir-frying it.

Now -- can anyone recommend a good Mexican cookbook?
