Let Them Eat Cake
Let me respond to the comments about white flour and pastry.

1. The perception that white flour and white bread are desirable because
the rich had them is certainly correct.  After all, "Let them eat cake."

2. That stone ground flour is more nutritious than white flour is also likely
correct.

3. That non-flaky pastry is therefore desirable is debatable; I happen to
like the texture and flavor of flaky pastry a lot and now prattling about
vitamins is going to change my taste.  I will, however, attempt to eat
a balanced diet and prevent any obvious deficiencies so that I can indulge
my taste.

4. It is not clear that white flour implies obesity, either for the rich
or for the newly arrived middle classes.  After, the fat rich may simpy
(sorry, simply) have eaten too much.  Also, nobody's diet, despite health
food claims to the contrary, was too terrific anywhere about 150 years ago.

5. On the other hand, a whole wheat/soy pastry may well have taste virtues
on its own; let's give it a try.
